Celebrate Pi Day with our BC blueberry and maple pie
Pi Day may not be a statutory holiday, but for lots of British Columbians and Canadians it is a highlight of the year. Why? Because...pie.
As a party, we don't take a side in the pie vs cake debate, but we do think whatever you indulge in tastes best when it's made with local BC and Canadian ingredients.
This blueberry and maple pie combines frozen BC blueberries and Canadian maple syrup with a perfect flaky pie crust. Enjoy it with some local ice cream (or your favourite non-dairy frozen treat).
BC Blueberry and Maple Pie Ingredients
Crust:
- 300g (2.5 C) all-purpose BC grown and milled flour (there are dozens of fantastic options available, hit your search engine to find one near you)
- 5g (1 tsp) Windsor or Sifto salt
- 5g (1 tsp) Rogers sugar
- 225g (1/2 lb) unsalted BC butter
- Approx 70g (1/3 C) ice water
Filling:
- 700g (5 cups) frozen BC blueberries
- 50g (1/4 cup) pure Canadian maple syrup
- 79g (1/2 cup) granulated Rogers sugar
- 45g (1/4 cup) tapioca starch
- Zest from one lemon + 30ml (2 tbsp) lemon juice*
- Pinch of Windsor or Sifo salt
- 5g (1 tsp) ground cinnamon
Egg wash:
- 1 local BC egg
- 10ml (2 tsp) water
- 10ml (2 tsp) granulated Rogers sugar (to sprinkle on top)
* NOTE: We know that lemons do not grow naturally in BC, outside of greenhouses. If you want to avoid using any ingredients in this recipe that are not British Columbian or Canadian, you can sub in 30ml of apple cider vinegar for the lemon juice, and omit the zest.
BC Blueberry and Maple Pie Instructions
- Preheat oven to 400 F.
- For filling:Combine ingredients in a saucepan. Raise temperature to medium, stirring frequently for 10-15 minutes.
- For crust:Mix dry ingredients. Cut in butter until the size of peas. Mix in cold water until mixture just comes together, err on the side of less water. Turn out onto lightly floured counter, form a ball and cut in two. Form two thick discs, wrap in wax paper or cling wrap and chill for a half hour before rolling out.
- Roll out 2 discs and place one into pie pan to form bottom crust.
- Add pie filling and cover with top crust.
- Crinkle the edges together, and slice a few holes in the top for airflow. You can be creative with these!
- Brush with egg wash and sprinkle with sugar.
- Place pie in the preheated oven for 30 - 40 mins. You will know the pie is done when the filling in the centre is bubbling.
- Remove the pie from the oven and allow to cool. This is crucial: filling will be runny until the pie is completely cooled.
- Serve with love.
